FROSTED CINNAMON ROLL BAKE
Makes 1 serving
Cooking time: Microwave 15 mins | Oven 12–15 mins 


INGREDIENTS

  • ¼ c. gluten-free oat flour 

  • ½ t. baking powder 

  • ¼ t. cinnamon 

  • 1T. pure maple syrup 

  • 1 ½ t. nut butter of choice 

  • 3 T. unsweetened applesauce 

HIGH PROTEIN FROSTING 

  • ½ c. greek yogurt OR smooth cottage cheese OR smooth ricotta cheese 

  • 1 T. granulated sweetener of choice 

  • ¼ t. cinnamon 


DIRECTIONS

  1. Lightly grease a microwave-safe bowl and add the dry ingredients. Mix well and set the bowl aside. 

  2. In a separate small bowl, combine the maple syrup, nut butter and unsweetened applesauce and mix well. 

  3. Combine this wet mixture with your dry mixture and mix until fully combined. If the batter is too thick, add an extra tablespoon of unsweetened applesauce. 

  4. Microwave the batter for 1 – 2 minutes, or until it’s just cooked in the center. Allow to cool slightly. 

  5. While the cinnamon bake is cooling, prepare the protein frosting mixture. Combine all the ingredients in a small bowl and mix until a thick frosting remains. Top the cinnamon bake with the frosting and enjoy!

Makes 4 cups
Time: 2 minutes, or until blended into a flour 

INGREDIENTS

  • 4 c. Gluten-free rolled oats 

DIRECTIONS

  1. Place the oats in a high-speed blender or food processor.  

  2. Blend until a flour consistency remains.
